Veal Oscar was named for King Oscar II of Sweden. The dish was first served at Restaurant Operakallaren, Stockholm, Sweden in 1897 in conjunction with the world fair. It was composed by the French maitre de cuisine of the Operakallaren restaurant, Paul Edmond Malaise, for the 25th anniversary of the accession of King Oscar II on the throne.
